Here was/is our menu this past week. The Taco Salad (lettuce, tomatoes, black beans, taco meat, cheese, crushed Doritos, and Creamy Italian dressing) is a parent favorite, but not exactly the healthiest salad in the world. I’ve made a lighter version of this in the past using lean ground turkey with my own taco seasoning, baked tortilla chips, and a light Ranch dressing (making your own dressing would be the best of all). Regardless, it tastes good! I’ll post some of these other recipes in the future. The Sausage Tortellini Soup is incredibly flavorful and a freezer club “home run”.
Sunday: Lemon Chicken Cheese Tortellini, salad
Monday: Taco Salad (see description above), orange slices
Tuesday: Chicken Parmesan, whole wheat rotini pasta with EVOO and herbs, steamed broccoli and cauliflower, apple slices
Wednesday: (I was gone) Pizza and peas
Thursday: (Nathan was gone) Mini ham and cheese sandwiches (on whole wheat dollar rolls), baked sweet potato, applesauce
Friday: Orange-Soy Salmon, mashed sweet potatoes and potatoes, multigrain rolls, roasted asparagus (my son loved helping me snap the asparagus and season it; see pics below)
Saturday: Sausage Tortellini Soup, salad, and pinneapple
It’s true. Getting your kids involved in the cooking process makes them much more excited to try the new foods they helped cook. Jack was very proud of his sous-chef abilities and happily tried “his” roasted asparagus!
