Menu: January 11-17


Here’s what’s been filling our bellies for dinner this past week. The (*) indicates a freezer club meal, meaning it required no prep that day.  It’s important for you to know that I don’t have time to cook the variety of entrees listed below each day. I rely BIG time on my Freezer Club contributions, and I highly suggest organizing one if you want to eat at home more often.

Monday:  Shrimp Scampi over angel hair pasta (recipe to come)*, steamed green beans, clementines

Tuesday: Oriental Chicken Slaw*, mango

Wednesday: Leftovers

Thursday: Beefy Baked Ravioli*, veggies and dip, apple slices

Friday: Delicious Ham and Potato Soup (recipe to come)*, veggies and hummus, whole wheat ciabatta rolls

Saturday: Super Sloppy Joes, Oven Fries, salad

Sunday:  Egg and Cheese Sandwiches, Apple/Orange/Carrot/Cranberry Juice (homemade), apple slices
