One of my favorite Christmas traditions that was passed down from my family is making a big ole breakfast after we open presents on Christmas morning. Here are a few of our healthier breakfast favorites that you might consider adding to your own Christmas morning menu.
Oven Omelet
Making eggs for a crowd doesn’t get easier than this. You can add in whatever you like best–ham, sausage, cheese, sauteed peppers and onions, spinach, etc.
Whole Wheat Pumpkin Pancakes
These are our favorite whole grain pancakes, hands down. They would pair perfectly with the Oven Omelet.

Brownie Baked Oatmeal
If your family loves oatmeal like we do, you can’t go wrong with this decadent baked oatmeal. Make this the night before, along with the Oven Omelet, and you’ll have an easy breakfast to throw in the oven the next morning. Or, you can make both ahead this week and freeze them unbaked. Just thaw in the fridge the night before. Here are a few other versions of baked oatmeal we like: Peanut Butter and Banana Baked Oatmeal and Baked Oatmeal with Fruit.
Blueberry Pumpkin Baked French Toast
Here’s a great way to use up leftover bread. I usually throw the heels from bread or stale bread in the freezer to use in this casserole. It’s delicious and full of sneaky fruits and veggies, too!

Making your favorite breakfast sandwich at home is so easy! This is how we make our favorite Starbucks sandwich.
Double Chocolate Waffles
If your crew loves waffles, make this batter the night before Christmas. Set it out on the counter that morning while your waffle iron warms up, and you’re ready to go. This recipe has sneaky shredded zucchini in it, but you can sub applesauce or pumpkin, if you like. They are amazing!
Chocolate Banana Muffins
Muffins are a great and easy addition to eggs, bacon and fruit. You can also make these ahead and freeze them, if you want. Just warm a frozen muffin in the microwave wrapped in a moist paper towel for 45 seconds to a minute. Some of our other favorite muffins are the Pumpkin Chocolate Chip Muffins.

Copabanana Cake
Thanks to my friend, Carla, we have found one of our favorite healthy cakes ever! This is perfect for a coffee cake at breakfast or a healthy dessert option. We all love this one! I just wish I had a better picture. We ate several pieces before I could grab a shot.
Green Smoothie, Super Food Smoothie, or Tropical Smoothie
