3 Family Favorite Make-Ahead Meals: A Guest Post

I’d like to thank Polly and Rachel for inviting me to do a guest post on their blog!  It’s always nice to make new blogging friends who share my interest in make ahead meals!

I work full-time as a second grade teacher, so you can imagine how tired I am when I come home from work.  It is a pleasure and a necessity to have a well-stocked freezer full of meals for my family that I can throw in the oven or heat in the microwave during the week.

Today, I’d like to share 3 of my favorite make ahead meals from my blog Make Ahead Meals for Busy Moms.

The first recipe is Make Ahead Chicken Patties.  They are made with healthy ingredients (chicken, green bell pepper, green onions, salt and ground black pepper).  No fillers!

I pull the chicken patties out of the freezer the day before I want to cook them, and place them in the refrigerator so they’ll be defrosted by the time I get home from work.  They broil up in 15 minutes or can be cooked on the grill for even less time.  Can’t get any easier than that!

The next recipe we love is Steak Pinwheels.  This one is a little fancy, so it’s great for company or dinner parties!

You can wrap each pinwheel individually and freeze them in freezer bags.  Take out as many pinwheels as you need and defrost them in the refrigerator a day before you cook them.  You can broil or grill them in about 15 minutes or less.

The 3rd recipe is Make Ahead Mini Chicken Pot Pies.  My husband and I love them!  I have given these pies away to family and friends when they are sick and need something easy to cook.  It is a bit of work to make them, but so worth it.

This recipe makes 6 mini pot pies.  You take them out of the freezer, brush a little egg wash on the crust, and throw them right in the oven.

I totally needed the potpie one. I was going to make a few individual meals for our neighbor recovering from surgery and home alone. I was trying to figure out how to make meals for an individual. Cheers!
