Spring that is. And springtime means asparagus, strawberries, lettuces, fresh herbs and more in stores, farmer’s markets and gardens. This seasonal produce is cheap, abundant and delicious! So I thought I’d pass along five of my favorite healthy, seasonal recipes. Like most of our recipes, they are made with real food ingredients but are easy to make, family-friendly, and tasty.
1. Chicken Penne Pasta with Asparagus
Whole wheat pasta tossed with seasoned chicken and vegetables in a broth-based sauce makes for a light but satisfying dinner. 20 minutes from start to finish!
2. Mini Italian Burgers
I’ve made these flavor-packed, healthier sliders for years for my family. They are SO good! Perfect for grilling season and a great way to use fresh herbs.
3. Whole Wheat Strawberry Shortcake
A healthier but no less flavorful take on a favorite dessert, I even serve this tasty treat for breakfast the next day.
4. Wilted Lettuce Salad
When you begin getting all that lettuce popping up in the next month, give this simply good salad a try. Old school but still a winner.
5. Roasted Asparagus
Roasting this seasonal veggie in the oven with a little olive oil and seasoning transforms it into a perfect side dish. You’ll find great prices this time of year on asparagus.
