Thank you for posting such healthy and kid friendly meals. My biggest hurdle is trying to find meals my little ones will love and eat.

  2. Lydia Coathup from Kingwood,Texas says

At the end of august, I became a member of your wonderful site and love everything about and mostly the wonderful and yummy recipes. Your chicken soup recipe my husband goes crazy about and had leftovers for lunch for a full week..Our soon to be 8 year old princess who is on the Autism scale and who is also epileptic( her special needs never stop her what so ever) has a good appetite. we have printed out so many of your family recipes that we are going to be making more of them this weekend after our monthly shopping trip(because we stuck with recipes and a few frozen but healthy dinners for our daughter, we were way under our monthly budget.
My mom question is that we will be making the chicken tenders for our daughter and we want to try and incorporate (hide some ) some veggies in it..How can we do that? should we put the veggies in the panko bread crumbs? frozen or fresh?
One thing she does love at her school at lunch with her lift skills class is also baked beans..

    Thank you and God Bless

Hi Lydia! First of all, thank you for your encouraging comments. This is exactly why we do this! We love helping families eat healthier and at home together. I’m all for sneaking in extra veggies into all kinds of meals, but I don’t have a great idea for sneaking them into that chicken tenders recipe. Maybe roll the tenders in cauliflower puree before breading it? If you want lots of ideas, though, do check out this post with 50+ ways to sneak in fruits and veggies into kid favorites: http://thrivinghomeblog.com/2012/10/5-simple-ways-to-sneak-fruits-and-vegetables-into-your-kids-food/

Thank you for the chili recipe. My picky child and husband were cleaning their bowls. Made for a peaceful/relaxing dinner time- thank you so much!

    • Rachel says

That’s so great to hear, Ann! My husband was floored that he actually liked a chili with sweet potato in it. 😉
