These recipes were home runs for us.
Tuna Patties from Simply Recipes – These contain only healthy fats and are high in protein. Nice blend of flavors helps cut back on the fishy flavor of tuna. My kids scarfed these down on mini buns with a little cheese on top. My husband and I liked them with a little all-natural tartar sauce, lettuce, and tomato on a bun. Bonuses: They are quick to throw together, do not require raw meat, and are cheap!
Autumn Chopped Salad from Espresso and Cream– I’ve made this salad at least five times now and have taken it to gatherings. It’s so simple and a huge hit. Who knew that mixing Poppy Seed Dressing and Balsamic Dressing could result in a perfect creamy balsamic? I keep the components in the fridge and make a salad several days in a row that way.
Chicken Parmesan Bake from Food Wishes – Oh yeah, this was a big hit with my family. I’ve made this twice and both were great. For one, I crushed the croutons and put them on top. For the other, I used Panko bread crumbs which I had on hand. So easy and freezable (before baking).
Lemon-Braised Chicken with Almonds and Cranberries from Delicious Living – I served this over brown rice and got good reviews from the family. Lots of flavor and moist chicken. A few things to know, if you make it: a) if you use half and half, it will curdle a little when you combine it with the lemon juice (which is fine, just looks funny), b) season the chicken and sauce well along the way, and c) broil for a minute or two at the end to provide a crunchy topping.
Mini Italian Pub Burgers from Food Network– I’ve made these a dozen times over the years. You can’t go wrong with these mini burgers that are packed full of flavor. I frequently make these for our freezer club, mainly because they are so easy and tasty.
Whole Wheat Banana Bread from 100 Days of Real Food – This was moist, delicious, and full of healthy ingredients. I was worried that the 1/4 cup honey wouldn’t be enough sweetener, but because of the bananas, it was just fine. If you do like things a little sweeter, you could easier add a little bit of stevia or a tad more honey. Will be making this again and again!
