Menu Plan

Dinner:

Sunday: Roasted Chicken and Vegetables, whole wheat stuffing, strawberries

Monday: Homemade Chicken Noodle Soup, green leaf salad, apple or pear slices (Note: I will use the chicken bones/neck from Sunday’s chicken to make Homemade Stock and used the leftover chicken in this soup. Very economical!)

Tuesday: Rosemary Shrimp Scampi, whole wheat angel hair pasta, steamed broccoli, grapes

WednesdayBreakfast for Dinner: Whole Grain Zucchini Pancakes, scrambled eggs, fruit salad

Thursday: Tomato Bisque, Autumn Chopped Salad, crusty sourdough bread, watermelon

Friday: leftovers

SaturdaySpinach Lasagna Roll-Ups, peas, blueberries and strawberries

Lunch Ideas:

leftovers

banana boats (peanut butter and raisins on bananas)

Roll-Ups

Instant Breakfast Sandwiches

Breakfast Ideas:

5 Minute Chocolate Oatmeal

hard boiled eggs

whole wheat bagels with cream cheese

plain yogurt with berries and ground flaxseed

Green Smoothie

Snacks:

Banana Split Power Smoothie (recipe coming this Tuesday!)

Chocolate Zucchini Bread (I’ll sub coconut oil for vegetable oil and turbinado sugar for brown sugar in this recipe.)
