Oh boy! This next week is the first time I’ll have been away from my family in a very long time…and it’s for three whole nights. My best friends from high school/college are meeting up in Colorado for a reunion in the mountains. I’m simultaneously super excited and nervous.
So, this week I’m trying to go simple with food, and I’ll working ahead by preparing soup for my husband to warm up on Thursday. Pray for him! 😉
Tuesday: Clean out the freezer/fridge night
Wednesday: BFD*: Breakfast Sandwiches, sliced mango
Thursday: Deli sandwiches, chips and carrots with hummus or ranch dip, apple slices
Friday: Italian Sausage and Tortellini Soup, whole grain bread, fruit salad
Saturday: Pizza take out
