In full disclosure, I am calling this a chopped salad because on a day when I had more time, I’d chop it up even more. But today was NOT one of those days so my chopped salad is a chunky salad. But you can’t call a salad chunky in its title. So you’re getting chopped.

Calm down. Everyone will be ok.

Anyway, this salad is the bomb. It’s packed with all sorts of veggies and protein and topped off with some killer Cilantro Lime Vinaigrette.

If you are a smart chef, you’ll make a big ol’ batch of this and just munch on it all week. One day I’ll get smart and do that. Probably on the same day that I have enough time to actually chop my chopped salad.

Cilantro Chicken Chopped Salad

This Cilantro Chicken Chopped Salad is fresh, vibrant, and makes a great lunch.


Ingredients

  • 1 batch of leafy green lettuce (romaine hearts work well), chopped
  • 1/2 can black beans, rinsed and drained
  • 1/2 to 1 cup corn
  • 1 cup chopped tomatoes or halved cherry tomatoes
  • 1 cup chopped cucumbers
  • 1/2 cup chopped fresh cilantro
  • 1 cup cubed cheddar cheese
  • 1 cup cooked chicken, cut into small pieces
  • Diced avocados (optional)

Instructions

  1. Place all ingredients in a large salad bowl. Hold off on adding avocado until the very end. Top with Cilantro Lime Vinaigrette.
