Menu Plan

This week, I’ll be making some meals for my freezer club (the Baked Lasagna and Pork Tenderloin) and eating some I receive (Cobb Salad and the Italian Soup). These meals are tried and true around our house and guaranteed winners. I’m also excited to try a new recipe from an Ellie Krieger cookbook that I got at the library.

Let me be a broken record and say once again, our family probably wouldn’t eat nearly as many or as nice of homemade meals if it weren’t for my freezer club friends! If you want to know more about starting one yourself, check out this post which also has tons of Freezer Meal ideas. At a minimum, I encourage you to find one other friend whom you can double meals and swap with. It’s been awesome for our family for many years.

Here’s what is on tap for us this week…

Dinners:

Monday: Baked Whole Wheat Lasagna (recipe to come soon!), Wilted Lettuce Salad, apple slices

Tuesday: leftover lasagna, green beans, nectarines

Wednesday: Pork Tenderloin with Seasoned Rub, Oven Fries, steamed broccoli and carrots

Thursday: Dinner with Bible study small group

Friday: Rosemary Pizza-Dough Dippers with Cheesy Pizza Dip (from Comfort Food Fix by Ellie Krieger, which is only $1.49 from some sellers on Amazon right now!)

Saturday: Cobb Salad

Sunday: Italian Sausage & Tortellini Soup, Honey Whole Wheat Bread (in bread machine), salad

Lunch Ideas:

Mediterranean Layered Dip, carrot sticks, and pita chips

Instant Homemade Breakfast Sandwiches

Roll-ups
