“Real Food Meets Reality” Menu: January 4-10

Happy New Year everyone! I’m ready to get back to meal planning each week to save money, time at the store, and to eat healthier. To eat more real food at home, I’m planning to utilize my slow cooker and bread machine more this year. If you’re in the same place as me, here are a few more ideas to achieve those goals.


Sunday: Slow Cooker Balsamic Shredded Beef*, Roasted Winter Vegetables, Wheat Dinner Rolls

*I plan to slow cook this on low for 6-8 hours and add a bit more liquid to make sure it comes out tender.

Monday: Baked Cheesy Spinach Tortellini, green salad with Balsamic Dressing

Tuesday: leftovers/clean out fridge or freezer

Wednesday: BFD*: Oven Omelet (with spinach, cheese, and ham), Peanut Butter Banana Baked Oatmeal

Thursday: Mini Meatloaves*, mashed potatoes (with organic russet potatoes and sweet potatoes), steamed broccoli, pear slices

*Use this same mixture to form mini meatballs for later in the week; store in fridge

Friday: Vegetable Minestrone Soup, whole wheat baguette, fruit salad

Saturday: Mini Meatballs with whole wheat spaghetti, green peas, clementines

*Breakfast for dinner

Breakfast Ideas:

Homemade Instant Oatmeal Packs

hard-boiled eggs* and wheat toast

Coconutty Granola with Dried Fruit (serve as cereal or over plain yogurt)

*I’ll make enough to last throughout the week and store in the fridge.
