Sausage & Tortellini Soup

key ingredients:

Ground Italian    Pork Sausage Petite-diced Tomatoes Chicken broth Fresh Spinach Frozen Cheese   Tortellini Cream Cheese

In a large skillet, brown the sausage over medium heat.

Combine sausage, diced tomatoes and chicken broth in crockpot. Cover & cook on LOW for 6-8 hours or HIGH for 3-4 hours.

Turn the temperature to high. Stir in the frozen tortellini and add fresh spinach.

Prep cream cheese mixture in a glass bowl. Microwave in 10 second increments until softened. Add hot soup liquid and stir until fully combined and smooth.

To make it a freezer meal:

Follow steps 1 and 2. Don’t cook the soup though. Freeze it alongside the tortellini and have fresh spinach when serving.

The broth in this soup is delicious, and it’s such an easy dump-and-go meal.  It’s a family favorite for us! - Renee
