Crockpot White Chicken Chili

key ingredients:

Northern Beans Onion Chicken Breast Lime Garlic Chicken Broth Chili Powder

Drain and rinse the beans in a colander. Then mash half of them with a potato masher or fork.


Saute the onions and peppers. Season with salt and pepper. Stir in garlic, cumin, coriander, and chili powder.


Add the peppers and onion mixture, broth, salt, pepper, and chicken breasts to the slow cooker and stir. Cover and cook on low for about 4 hours


Remove the chicken to a cutting board and shred with two forks or chop into bite-sized pieces. Add chicken back to the cooker and stir in the cilantro and lime juice.


Serve warm with lime wedges on the side and suggested toppings: -diced avocado -plain Greek yogurt -cilantro -onion


To make it a freezer meal:

Follow Steps 1-2. Add cooked, veggie mixture, broth, chicken breasts, beans, salt and pepper to a gallon-sized freezer bag or container. Seal and freeze flat.
