Easy Lemon Bars

Sugar All Purpose Flour Sugar Lemon Juice Lemon Zest

To make the crust stir together the flour, sugar, and salt.

Add cut-up butter to the bowl and use a pastry cutter to cut it all together until the mixture resembles fine crumbs.

Press the crumb mixture into the prepared pan and bake for about 20 minutes.

Work through 3 lemons and get the zest. Then  squeeze the juice out of the three lemons.

To make the lemon topping, in a small bowl whisk together sugar and flour. In a separate bowl, whisk together the eggs, lemon zest, and lemon juice.

Pour filling over the crust and bake for another 20 minutes or until the lemon topping is solidified.

To freeze: 

Simply place them in an airtight container or freezer bag. Seal and freeze for up to 3 months.

These came out delicious! Loved the thicker crust that balanced out the sweet citrus on top. I’ll be making these a lot!-Liz
