I don’t know about you, but I look forward to Take it Easy Tuesday every week. It’s generally a very simple meal that I can get on the table for my crew in no time. One of my favorite Take it Easy Tuesday Meals is the Small Bites Board. My children love this night. They get to eat with their hands. They get to combine deli meat and cheese and pickles and whatever else I put on the tray.

But can I tell you why I really love this meal? Everybody is around the table eating, everybody can find something that they like, and everybody lingers.     I thought I would share an easy way to make baked sweet potatoes that I recently learned and we love. I wash the whole sweet potatoes then rub coconut oil on them. Then put them in the crockpot on high 3-4hrs. They are so good. Hope you enjoy.

  2. I really enjoy your menu plan ideas, and especially how you encourage to stock up on certain items. You do include ways to use them. Along with that, do you ever include those ideas in future menus? For example, you use the chips in the Fiesta Chopped Salad. So, at some future time, would you say in your menu planning, “Today we’re dipping into our storage to make this item.”?

    I am new to you, so you may, and I just haven’t run across it yet. 🙂
