Potato Soup

key ingredients:

Yukon potatoes yellow onion chicken stock sour cream

Saute butter and olive oil until melted; add onion and season.

Make the roux.

Stir in chicken broth and diced potatoes.

Pressure Cook the soup for 7 minutes.

Use a potato masher to mash ingredients to desired consistency.

Stir in sour cream and serve.

To freeze: Store in an air tight freezer container and freeze.
