Instructions
Prep Sweet Potatoes: Peel and dice sweet potato into 1/2-inch cubes. (You can also just scrub the potato well and leave the skin on for more nutrition, if preferred.) In a mixing bowl, combine the cubed potatoes, oil, salt, pepper, garlic powder, and fresh rosemary.
Air Fry: Preheat air fryer to 400°F. Spray the bottom of the tray with cooking spray. Place the potatoes in a (mostly) single layer in the air fryer tray. Cook for 10-12 minutes or until crispy and golden, shaking halfway through.
Serve: Taste and season with more salt, if needed. Suggestion: Serve with Avocado Aioli for dipping.
Notes/Tips
You can substitute 1/4 teaspoon dried Italian seasoning for the rosemary.
Try to dice the sweet potatoes as evenly as possible to ensure even cooking.
