Cheeseburger Egg Rolls with Secret Sauce made easy! Crispy, cheesy, and freezer-friendly, these Disney-inspired rolls are perfect for quick dinners, watch parties, or lunchbox fun.
Make Filling:In a large saute pan, heat oil over medium-high heat until shimmering. Saute bell peppers and mushrooms until they begin to soften, about 4-5 minutes. Stir in garlic and cook for about 30-60 more seconds. Season the veggies lightly with salt and pepper and then set aside on a plate.Add the ground beef to the same saute pan and cook, breaking it up with a wooden spoon or ground beef tool along the way, until there is no longer any pink showing. While it cooks, season the meat with 1 teaspoon salt, 1/2 teaspoon pepper, and a pinch of red pepper flakes. Drain any excess grease.Stir in Worcestershire sauce and the cooked veggies until everything is combined. Cool filling completely before continuing.
Assemble Egg Rolls:Place an egg roll wrapper on a clean work surface with a small bowl of water nearby. Arrange the wrapper so that it is a diamond shape.Place about ⅓ cup of the meat filling in the center of the wrapper. Top with 1 teaspoon of chopped pickle and 3 strips of cheese.Dip your fingers lightly into the water, then rub the water on the two top sides of the wrapper. Take the point of the diamond shape closest to you and bring it up and over the filling, tucking in filling as you go. Roll towards the top point of the wrapper, and place seam side down on a tray lined with wax paper.Repeat with the remaining filling and wrappers.

Notes/Tips
When working with egg roll wrappers, keep them as cold as possible. The more they warm up, they become sticky and will tend to tear or be hard to roll.
Keep egg rolls hot in between air fryer batches by placing them on a baking sheet and keeping them in a 200°F. oven.
Make the Secret Sauce ahead and store in the fridge for up to 2 weeks to use as needed when you bake egg rolls from the freezer.
