Lemon Feta Orzo

A quick and easy side dish made with orzo pasta, lemon, herbs, and feta. Light, fresh, and ready in 15 minutes!

Yield: 4-6 side dish portions (3 cups cooked orzo) 1x

Ingredients

  • 1 cup orzo
  • 2 tablespoons butter or olive oil
  • 1/4 teaspoon garlic powder or 1 garlic clove, finely grated
  • Zest of 1 lemon
  • Juice of 1/2 lemon (about 1 tablespoon)
  • 2 tablespoons finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh dill, basil, mint or chives (whatever you like best)
  • 1/2 cup crumbled feta
  • Salt and pepper, to taste (start with 1/8 teaspoon each)

Instructions

  1. Cook the orzo according to package instructions in salted water. Drain and return to the pot.
  2. Add butter or olive oil while the orzo is still warm, and stir until melted.
  3. Stir in the garlic, lemon zest, juice, fresh herbs, and feta cheese crumbles. Season with salt and pepper to taste (start with ⅛ teaspoon each).
  4. Serve warm, room temp, or even chilled.
