Chicken Burrito Bowl

Chicken Burrito Bowls are a healthy and filling dinner idea for everyone! Delicious marinated grilled chicken is served over brown rice and with your favorite southwest toppings. They can easily be meal prepped for the week or turned into an easy freezer meal.

These Southwest Chicken Burrito Bowls proved to be an entire family pleaser, especially because it’s a versatile, pick-and-choose what goes in your bowl recipe. Not only did they taste delicious, but this meal is so simple to pull together and double to freeze for later. Seriously, just look how easy they come together:

What’s in a Chicken Burrito Bowl?

This easy dinner packs a high protein punch. Veggies like shredded lettuce, tomatoes, and avocados make it a one bowl wonder.

  • Brown Rice – Adds lots of nutrition. You can sub white rice or quinoa.
  • Southwest-flavored chickenUse this marinade.
  • Black Beans – Fiber and protein!
  • Cheese – Shredded sharp cheddar is our pick but use your favorite cheese or leave it out all together.
  • Veggies – Shredded lettuce, diced tomatoes, diced avocados, or minced red onion
  • Condiments – Sour cream or plain Greek yogurt, salsa, and a squeeze of lime for a Tex Mex taste experience.

Pro Tip: I used the Instant Pot to make my brown rice. It totally worked! I used this recipe from Our Best Bites.

How to Meal Prep & Freeze Burrito Bowls

One of the beauties of this recipe is that it can be made in advance and eaten for lunches all week. In addition to that, like so many of our freezer-friendly recipes, this one can be turned into a delicious freezer meal.

TO PREP FOR MEAL KITS/FREEZER:

To create a meal kit, place each of the following ingredients in separate quart-sized freezer bags and seal tightly:

  • 2-3 cups cooked brown rice
  • Half a batch of grilled Southwest Chicken Tenders (1.5 pounds chicken)
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1-2 cups shredded cheddar or Mexican blend cheese
  • 1 cup salsa

Put all the smaller bags into a plastic grocery sack or a large freezer container. Seal, label and place in the refrigerator or freezer together as a meal kit.

TO PREPARE:

If necessary, thaw the meal pack in the refrigerator for at least 24 hours. Warm the chicken, beans, and rice in the microwave, if you want. Set out all the ingredients, including the fresh optional toppings, like lettuce, tomatoes, avocados, sour cream, and lime wedges. Build your bowl and enjoy!

Ingredients

Bowl Base:

Optional Toppings:

  • 12 cups shredded cheddar or Mexican blend cheese
  • 2 cups shredded lettuce (I like Romaine)
  • 1 large tomato, diced
  • 1 avocado, diced
  • 1 cup plain Greek yogurt or sour cream
  • 1 cup salsa
  • 12 limes, cut in quarters (squeeze over the top of the bowl)

Instructions

Make It Now:

Add a scoop of rice, grilled chicken, and beans to a bowl. Top with your favorite toppings. Toss to combine. Enjoy with tortilla chips on the side.

Whole Wheat Mac and Cheese in the Instant Pot

This Instant Pot Whole Wheat Mac and Cheese recipe takes just 18 minutes from start to finish, dirties only one pot, and tastes creamy and delicious! Plus, it’s made with all real food ingredients.

It was 5:30 p.m. and my kids were starving. I was finishing up a work project and hadn’t even given dinner a thought when I began hearing the low-grade whines from the next room. “I’m hunnngrrrreeee!” The Instant Pot to the rescue. I happened to have some whole wheat pasta in the pantry, along with the other few ingredients in this recipe.

How Long Does It Take to Cook Whole Wheat Mac & Cheese in the Instant Pot?

Within 2 minutes I had dumped in my beginning ingredients and locked the lid. It took about 10 minutes to come to pressure, 2 minutes to cook, and another 2 minutes to release the pressure. I ended by stirring in the milk and cheese for another 2 minutes. Voila! An 18 minute recipe from start to finish!!!

Description

This Mac and Cheese recipe takes just minutes to pull together, dirties only one pot, and tastes creamy and delicious!


Ingredients

  • 1 pound whole wheat elbow pasta
  • 3 tablespoons butter
  • 1 teaspoon yellow mustard
  • 1 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 4 cups water
  • 3/4 cup whole milk
  • 1/3 cup half and half
  • 34 cups shredded Colby Jack or Cheddar cheese (or Gruyere for something fancier!) (Here’s how to shred your own cheese.)

Instructions

  1. Add pasta, butter, mustard, salt, pepper, and water to the pot and stir.
  2. Lock and seal the lid. Cook at high pressure for half the pasta cooking time on the package, minus 1 minute. (So, if the directions say 6 minutes: Half is 3 minutes, minus 1 minute, means you’ll cook it for 2 minutes total.)
  3. Use a quick release of the pressure when cooking time is through. Be sure to cover the spout with a dish towel to minimize splatters.
  4. Stir in the milk and half and half. Then, slowly stir in the cheese 1 handful at a time. Taste and adjust salt and pepper amounts, if needed. Enjoy!
