Panini Sandwich Bread: A Bread Machine Recipe

Panini sandwich bread makes for a delicious lunch, dinner, or snack. Use your bread machine to whip up a batch of these for your whole family to enjoy!

Aside from tortillas, I don’t think I have bought any type of bread since I got my bread machine a few months ago. Since I meal plan every week, I know in advance when we are going to need some type of bread so I plan to have time to make it earlier that day.

We had a bunch of extra turkey from Christmas so our plan was to make turkey and pesto paninis one night for dinner. I looked at a few recipes for panini bread online and found this one (sorry, I don’t have the original source!).

They were really easy to make and turned out so good! They had a hint of sweetness and a lighter texture than normal bread. We used them for paninis but this bread recipe could be used for any sandwich. In fact, one morning I just warmed it up and put some honey and butter on it and my daughter scarfed it down.

Description

Panini Sandwich Bread that is homemade press-worthy perfection!


Ingredients

  • 1 1/4 cups milk, slightly warmed
  • 1 beaten egg
  • 2 tablespoons butter
  • 1/4 cup white sugar
  • 3/4 teaspoon salt
  • 3 3/4 cups bread flour
  • 1 1/4 teaspoons active dry yeast

Instructions

  1. Place all ingredients in bread machine according to manufacturer’s directions.
  2. Select dough setting.
  3. When cycle is complete, turn out onto floured surface and divide into 10 pieces.
  4. Shape into 6-inch oblongs for panini style rolls.
  5. Flatten them down pressing with your hand or rolling pin.
  6. Place on parchment lined baking sheet.
  7. Cover and let rise until doubled, about 45 minutes.
  8. Brush with melted butter.
  9. Bake at 350° for 12-14 minutes.
  10. Oven temperatures vary so check after 9 minutes to see if done.

If you follow me on Pinterest you have probably noticed a theme in all of my most recent pins: bread machine recipes! You can probably conclude from my new found interest in bread that I finally got my own bread machine.

I wanted to share a bread machine recipe that turned out to be SO GOOD. Not only did this bread smell super yummy as it was baking but we discovered that it makes the BEST FRENCH TOAST EVER.

I don’t know if we can ever go back to normal french toast after using this bread recipe. Both my husband and my 1.5 year old gobbled it up for dinner and wanted the same thing for breakfast the next morning.

I also tried it with some strawberry jam and discovered it was great with that, too.

Cherry Yogurt Bread might be a regular in our house from now on. I’m going to have to make another loaf of this and freeze it for future french toast making.

Ingredients

  • 3/4 cup water
  • 1/2 cup cherry yogurt (preferably organic)
  • 1/4 cup all-natural applesauce
  • 1 1/4 teaspoons salt
  • 1 tablespoon brown sugar (or unrefined cane sugar)
  • 3 cups white bread flour (Notes: I used all-purpose flour and it worked fine. I also have subbed one cup of white flour with wheat flour and it still turned out yummy with no noticeable flavor change.)
  • 3/4 cup dried cherries
  • 2 teaspoons fast rising yeast OR 3 teaspoons active dry yeast

Instructions

  1. Add ingredients and bake according to your bread machine’s instructions. Be ready to make more because your family will want it!

Notes

Freezer Meal Instructions:

To Freeze:
Bake bread according to your machine’s instructions. Let cool completely. Slice (or leave the whole loaf) and put in freezer safe bag or container. Freeze for up to 3 months.
To Prepare:
Let bread thaw in refrigerator overnight or warm in microwave or toaster.

Talk about some yum-yum in the tum-tum! In a hunt for banana bread recipes, I stumbled on this recipe from Cooking Light. Since the recipe called for grits, I almost didn’t make it. However, after consulting Rachel and doing a little research, I realized I could replace the grits with oatmeal. I made a few other tweaks and came out with two delicious loaves of bread that I’ve been enjoying in the mornings.

It’s hearty. It’s healthy. It’s sweet. It’s delish. I made an extra loaf so I could freeze it for later. They are both already gone. Oops.

Description

You will want to try this banana blueberry bread. It is hearty. It’s healthy. It’s sweet. It’s delicious. Bake a second loaf to store in the freezer.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 3/4 cup uncooked oats
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3 tablespoons canola oil (can also sub with real butter or coconut oil)
  • 1 cup mashed ripe banana
  • 3/4 cup blueberries
  • 2 large eggs, lightly beaten
  • Cooking spray

Instructions

  1. Preheat oven to 350°.
  2. Lightly spoon flours into dry measuring cups; level with a knife. Combine flours, oats, sugar, salt, baking powder, and baking soda in a large bowl; make a well in center of mixture.
  3. Combine oil, banana, blueberries, and eggs; add to flour mixture. Stir just until moist.
  4. Spoon batter into an 8 x 4-inch loaf pan coated with cooking spray.
  5. Bake at 350° 1 hour or until a wooden pick inserted in center comes out clean.
  6. Cool bread in pan 10 minutes on a wire rack.
  7. Remove bread from pan, and cool completely on wire rack.

Notes

Freezer Meal Instructions:

To Freeze:
Bake bread as directed in recipe. Let cool completely. Once cool, cut in slices. Place in freezer safe bag or container. Store for up to 3 months.

To Prepare:
Remove desired number of slices from freezer. Warm them in the refrigerator overnight (great if you’re thawing the whole loaf) or for a few seconds in the microwave (perfect for just a slice or two).
