Healthy Kid Snack: Chocolate Nut Butter Pretzels

First off, thanks to my friend, Nikki, for this idea!  Today, I received another “you’re the best mommy in the world!” cheer during snack time thanks to her simple kid-friendly snack idea.

If you use a whole grain pretzel, an all-natural nut butter, and the darkest of chocolate for these Chocolate Peanut Butter Pretzels, you really can pull this off as a healthy snack for your kids.  It’s got fiber, protein, good fat, and antioxidants.  We had this today with green tea for an extra antioxidant boost during this cold/flu season.

One warning, I had to set a limit for myself, because when you combine something salty with chocolate there is a high likelihood I won’t have much restraint!

Chocolate Nut Butter Pretzels

Makes: About 50 pretzels or about 10 servings

Here are the approximate amounts I used:

1/4 cup dark chocolate chips (I use Guittard Extra Dark Chocolate Chips)
1 T almond butter
1 T all-natural peanut butter
50 spelt pretzels (I use Newman’s Own Spelt Pretzels, because of the high fiber and wholesome ingredients.)

Melt chocolate and nut butter(s) in microwave in 20 second increments, stirring each time until melted.

Dip pretzels in the mixture.  Lay pretzels flat on parchment paper and put in the fridge to firm up for about 30 minutes.
