Cheeseburger Egg Rolls with Secret Sauce

Ingredient Notes
- Green bell pepper and mushrooms – Chopping these small and consistent in size will make better egg rolls.
- Lean ground beef – You could sub ground turkey, chicken, or any ground meat with a similar fat content.
- Worcestershire sauce – We prefer a brand with clean ingredients like Lea & Perrin’s.
- Egg roll wraps – I use Nasoya Refrigerated Plant-Based Egg Roll Wraps that I find at Walmart in the refrigerated section of produce near tofu and kimchi.
- Dill pickle – Using sandwich pickles makes the chopping easier.
- White cheddar cheese – You can sub your favorite cheese for burgers.
- Secret Dipping Sauce (from our Smash Burgers recipe) – Consists of all the delicious ingredients people put on burgers (mayonnaise, ketchup, mustard, dill pickle, and more).
Tips From Whitney’s Kitchen
Our long-time photographer, Whitney Reist from Sweet Cayenne–who also happens to be a trained chef, registered dietitian, and friend of ours–developed this recipe for Thriving Home! Here are some of Whitney’s pro tips:
- When working with egg roll wrappers, keep them as cold as possible. The more they warm up, they become sticky and will tend to tear or be hard to roll.
- Keep egg rolls hot in between air fryer batches by placing them on a baking sheet and keeping them in a 200°F. oven.
- Make the Secret Sauce ahead and store in the fridge for up to 2 weeks to use as needed when you bake egg rolls from the freezer.
- Cut the cheddar cheese slices about 1/4-inch wide like the photo.

How to Make Cheeseburger Egg Rolls
Here’s a 30,000 foot view of the recipe along with some process photos, but you can find the full, printable recipe at the bottom.
Make Filling
- Heat oil in a large saute pan over medium-high heat. Add bell peppers and mushrooms. Cook 4–5 minutes until they begin to soften. Stir in garlic and cook 30–60 seconds. Season lightly with salt and pepper, then transfer to a plate.
- Add ground beef and cook until no longer pink, breaking it apart as it cooks. Season with 1 tsp salt, 1/2 tsp pepper, and a pinch of red pepper flakes. Drain excess grease.
- Stir in Worcestershire sauce and the cooked veggies. Let the filling cool completely before rolling.

Assemble Egg Rolls
- Lay a wrapper on a clean surface in a diamond shape. Keep a small bowl of water nearby.
- Spoon about 1/3 cup of filling into the center. Top with 1 teaspoon chopped pickle and 3 strips of cheese.
- Dip your fingers in water and run it along the top edges of the wrapper. Fold the bottom corner over the filling, tuck in the sides, and roll toward the top corner. Place seam-side down on a wax paper-lined tray.
- Repeat with remaining wrappers. Pro Tip: Don’t overfill the egg rolls—they’re easier to roll and crisp up better.

Cook Egg Rolls & Make Optional Sauce
Cook the egg rolls using one of the methods below. While they bake, mix up the secret dipping sauce in a bowl.
- Air Fryer Baking Method: Preheat air fryer to 370°F. Spray all sides of egg roll with cooking spray and rub with your hands to evenly coat. Cook in batches for 10 minutes, turning halfway, or until golden and crisp. (Do not overcrowd the basket.)
- Oven Baking Method: Preheat oven to 400°F. Line a baking sheet with parchment paper. Place egg rolls on top and spray all sides of the egg roll with cooking spray, rubbing around as needed to coat. Bake for 15-16 minutes, flipping halfway, until hot, golden, and crispy.


Freezer Instructions
Of course we have freezer instructions for this. Make up extra for quick snacks or lunches!
Freeze For Later: After rolling the egg rolls, flash freeze the tray of unbaked egg rolls for 2 hours until solid (this helps them not stick together). Then transfer to a freezer bag for long-term storage (up to 6 months).
Prepare From Frozen: Use preferred method below:
Air Fryer Baking Method: (no need to thaw) Preheat air fryer to 400°F. Spray all sides of egg roll with oil cooking spray and rub with your hands to evenly coat. Cook in batches for 6 minutes, flip, and cook another 4 minutes, until golden and crisp. (Do not overcrowd the basket.)
Oven Baking Method: Thaw overnight in the fridge. Preheat oven to 400°F. Line a baking sheet with parchment paper. Place egg rolls on top and spray all sides of the frozen egg roll with cooking spray, rubbing around as needed to coat. Bake for 15-16 minutes, flipping halfway, until hot, golden, and crispy.
Make the secret sauce, while they bake or air fry. Serve egg rolls hot with the dipping sauce on the side.

Yes! Wrap tightly and store for 1-2 months. You can reheat frozen rolls at 400°F for 15-18 minutes.
No. We find that anything with mayonnaise in it just doesn’t do well when frozen.

Ingredients
- 1 tablespoon olive oil (sub: avocado oil)
- 1/3 large green bell pepper (diced; about 1/2 cup)
- 1/2 cup baby bella mushrooms (diced )
- 2 cloves cloves (minced)
- salt and pepper (to taste)
- 1 pound lean ground beef (sub: ground turkey or chicken)
- 1/8 tsp red pepper flakes
- 2 tablespoons Worcestershire sauce
- 14 egg roll wraps
- 1/2 cup dill pickle (drained and finely chopped)
- 6 slices white cheddar cheese (sliced into strips)
- Optional for serving: Secret Sauce
Instructions
- Make Filling:In a large saute pan, heat oil over medium-high heat until shimmering. Saute bell peppers and mushrooms until they begin to soften, about 4-5 minutes. Stir in garlic and cook for about 30-60 more seconds. Season the veggies lightly with salt and pepper and then set aside on a plate.Add the ground beef to the same saute pan and cook, breaking it up with a wooden spoon or ground beef tool along the way, until there is no longer any pink showing. While it cooks, season the meat with 1 teaspoon salt, 1/2 teaspoon pepper, and a pinch of red pepper flakes. Drain any excess grease.Stir in Worcestershire sauce and the cooked veggies until everything is combined. Cool filling completely before continuing.
- Assemble Egg Rolls:Place an egg roll wrapper on a clean work surface with a small bowl of water nearby. Arrange the wrapper so that it is a diamond shape.Place about ⅓ cup of the meat filling in the center of the wrapper. Top with 1 teaspoon of chopped pickle and 3 strips of cheese.Dip your fingers lightly into the water, then rub the water on the two top sides of the wrapper. Take the point of the diamond shape closest to you and bring it up and over the filling, tucking in filling as you go. Roll towards the top point of the wrapper, and place seam side down on a tray lined with wax paper.Repeat with the remaining filling and wrappers.
