By: Rachel TiemeyerPosted: 11/7/26

Jump to Recipe Email

These baked chicken parmesan meatballs go into the pan raw and bake in marinara with Parmesan and fresh mozzarella, all in one dish. There’s no browning, prep takes about 20 minutes, and they freeze beautifully.

Why We Love It

This recipe was YOUR idea. When we asked the 8,100 members of our Freezer Foodies Facebook group what they wanted us to make next, chicken parm meatballs won the vote.

So I set out to make something that tastes like classic Chicken Parmesan with a fun meatball twist. My rules: one pan, no standing at the stove browning meatballs, and it had to work as a freezer meal. It also had to please my kids and the grown-ups at the same table.

After 6 tests across 3 kitchens, here’s why we think you’ll love it:

  • One pan, one bake. The raw meatballs bake right in the sauce, so there’s nothing to brown and only one dish to wash.
  • Tastes like Chicken Parmesan. Parmesan and fresh basil in the meatballs, plus a melty mozzarella top.
  • Freezer-friendly. Assemble it, wrap it, and freeze it with the cheese already on.
  • Kid-friendly and adult-friendly. Mild flavors for kids, and it’s good enough for company.
  • Serve it three ways. Over pasta, in a chicken meatball sub, or with garlic bread for dipping.
  • Budget-friendly. Rachel Walters, our recipe developer, pointed out that ground chicken costs less than chicken breasts, so these ground chicken parmesan meatballs are a cheaper way to enjoy Chicken Parmesan.

Ingredients

Ingredients for Chicken Parmesan meatballs measured out and labeled.

Ingredient Notes

  • Lean ground chicken: Ground turkey works too and bakes in the same time.
  • Fresh basil: It’s what makes these taste like Chicken Parmesan. You can use 2 teaspoons dried instead.
  • Marinara sauce: It’s half the flavor, so use one you like. Our favorite is Rao’s. It’s pricey, but the ingredients are clean and the taste is fantastic. You can also make our Slow Cooker Marinara Sauce. Taste your sauce first, and if it’s on the bland side, add a pinch of salt.
  • Fresh mozzarella: It melts more evenly and browns slower than shredded (we tested it!). Tear it or slice it thin. One cup of shredded low-moisture mozzarella works, though, if that’s all you can find.

How to Make Chicken Parm Meatballs

Detailed instructions are in the recipe card below.

Marina sauce spread on the bottom of a 9x9-inch white casserole dish.
Prep the dish: Preheat oven and spray baking dish with cooking spray before spreading marinara sauce on the bottom.
Ground chicken, panko, Parmesan, egg, basil and seasonings in a white bowl, ready to mix.
Mix meatballs: In a large bowl, gently combine ingredients with a fork or clean hands. Don’t overmix.
Hand rolling a raw ground chicken meatball over the mixing bowl.
Form meatballs: Shape into 1 1/2-inch meatballs (18-20 total).

Place meatballs: Place them directly in the sauced dish.
Raw meatballs topped with marinara sauce in a square baking dish.
Top with sauce: Spoon marinara sauce over the tops of the meatballs so each one is coated. This keeps them from drying out while baking.
Torn fresh mozzarella and grated Parmesan over marinara-covered meatballs.
Add cheese: Sprinkle with grated Parmesan and scatter torn fresh mozzarella or shredded low-moisture mozzarella over the top.

Bake: Bake until the meatballs reach 165°F in the center. Don’t rely on the clock alone; check with a thermometer. Top with fresh minced herbs.

Testing Notes From Our Kitchens

These took six rounds of testing across three kitchens to get right.

My first test was a flop, and not because of the recipe. I put the dish into an oven that I had never turned on. (Lesson learned: check that the oven is actually on.) Twenty minutes later, I had some very cold meatballs.

My second try worked, but it needed a second pan, which broke my own rules.

So I handed my notes to Rachel Walters, our recipe developer and a Culinary Institute of America graduate. She tested the one-pan method three more times, and her very first test bite “tasted just like chicken parm.”

Her biggest discovery: the type of pan changes the bake time more than anything else.

Pan: Time: What happened:
9×9-inch light metal 22 minutes Fastest and most even; cheese golden in spots
8×8-inch ceramic (thawed from frozen) 36 minutes Plan on 30 to 35 minutes if baking fresh
8×8-inch glass 38 minutes Edge meatballs hit 190°F while the center was at 150°F; foil went on at 33 minutes

Lastly, our photographer, Whitney Reist who also happens to be a Registered Dietitian and trained chef, made these for her family and said, “These meatballs were so easy and delicious! I loved baking them right in the sauce – that just really streamlined everything.”

As always, we do the trials and errors, so you don’t have to!

Ways to Serve Chicken Parmesan Meatballs

  • Over pasta: Instant Pot spaghetti or our Butter Noodles for picky eaters.
  • As a chicken meatball sub: Pile 4 or 5 meatballs onto a toasted hoagie roll with extra sauce and cheese. Use our Meatball Subs recipe for an easy method.
  • With garlic bread for dipping: Our Texas Toast Garlic Bread or Pesto Cheese Bread.
  • With a vegetable: Oven Roasted Broccoli, Skillet Green Beans, or Italian Chopped Salad.

Tips for the Best Baked Chicken Meatballs

  • Tear the mozzarella. Thick slices clumped and got goopy as they cooled. Torn pieces melted evenly across the pan.
  • Check the middle meatball. It’s always the last one done. It should reach 165°F when fully cooked.
  • Use foil to prevent browning. We talked about adding the cheese halfway through, but found that loosely tented foil was easier and gave better control over browning.

Make It a Freezer Meal

This is the kind of chicken meatball casserole I love to double, so one goes in the oven while the other goes in the freezer for a crazy week.

Freeze For Later: Follow Steps 1-5. Wrap tightly and freeze the casserole. Freeze up to 3 months.

Prepare From Frozen: Thaw casserole for 24 hours in the refrigerator, let sit out at room temperature for 30 minutes, and bake as directed in the recipe card. It may bake for a bit longer if it’s still cold.

In our freezer test, the meatballs came out just as tender as the fresh batch. The fresh mozzarella did release a little more liquid into the sauce. That was great over pasta but less ideal on a sub. You can always dab it with a paper towel.

Wondering whether to freeze meatballs raw or cooked? Our guide to freezing meatballs raw or cooked walks through both. For more freezer ideas, see our 30+ Kid-Friendly Freezer Meals.

FAQs

Do I need to brown the meatballs first?

No. They bake raw right in the sauce, so the sauce keeps them moist and you skip the extra pan.

How long do baked chicken parmesan meatballs last?

3 to 4 days in an airtight container in the fridge, or up to 3 months in the freezer.

Can I double it?

Yes! This is a great use of your time in the kitchen. Prep in two different 8×8 inch pans and either bake at the same time (this may take a little longer than our instructions) or bake one now and freeze one for later.

How do I know when it’s done?

Check the middle meatball with a meat thermometer. It should register 165°F when it’s fully done. But, I have found that if you remove it at 160°F and keep it covered for a few minutes, the internal temp will still rise another 5 degrees because of carry-over cooking time. The good news is that it’s hard to dry out this casserole because of the sauce and cheese!

Ingredients

  • 2 cups marinara sauce (divided)
  • 1 pound lean ground chicken
  • ⅓ cup Panko bread crumbs
  • ⅔ cup grated Parmesan cheese (divided)
  • 1 large egg (beaten)
  • 2 tablespoons minced fresh basil or parsley (plus more for serving)
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning (crushed in hand)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 8 ounces fresh mozzarella (thinly sliced and torn)

Instructions

  1. Prep the dish: Preheat the oven to 400°F. Spray an 8×8” ceramic or glass baking dish with cooking spray (see cooking notes about metal). Spread 1 cup of marinara sauce in the bottom.
  2. Mix meatballs: In a large bowl, gently combine ground chicken, Panko bread crumbs, half of the grated Parmesan cheese (for the meatballs), beaten egg, minced fresh basil or parsley, garlic powder, Italian seasoning, salt, and black pepper with a fork or clean hands. Don't overmix.
  3. Form and place meatballs: Scoop a heaping tablespoon at a time and shape into 1 1/2-inch meatballs (18-20 total). Place them directly in the sauced dish.
  4. Top with sauce: Spoon the remaining marinara sauce over the tops of the meatballs so each one is coated. This keeps them from drying out during the single bake.
  5. Add cheese: Sprinkle with the remaining grated Parmesan and scatter fresh mozzarella, torn or thinly sliced (or 1 cup shredded low-moisture mozzarella), over the top.
  6. Bake: Bake 30-35 minutes (ceramic) or 35-40 minutes (glass) or until the meatballs reach 165°F in the center. Don't rely on the clock alone; check with a thermometer. Top with fresh minced herbs.

Freezer Instructions

Notes/Tips

  • Storage: Store cooled meatballs in an airtight container or Ziploc bag in the fridge for 3-4 days, or in the freezer for up to 3 months.
  • Substitutions:
    • Ground chicken – Use ground turkey for a similar taste and cook time.
    • Fresh mozzarella – Use 1 cup shredded mozzarella per batch
    • Fresh herbs: Use 2 teaspoons dried basil or parsley instead of fresh per batch.
  • Serving: Serve over pasta, with garlic bread, or on toasted hoagie rolls as meatball subs.
  • Gluten-Free Version: Use gluten-free breadcrumbs instead.
  • Baking Times for Different Pans:
    • 20-25 minutes for a 9×9” light metal pan.
