These easy Aldi recipes are hand-selected for newer cooks who want to eat a well-balanced diet on a budget. All ingredients can be found at Aldi to save money and only require a stove top or oven and simple kitchen tools. Meal prep instructions included, if youโ€™d like to spend one day a week prepping one or more of these for the fridge or freezer.

Cooking Notes About These Aldi Recipes

Take a moment to read through my notes below, for important cooking and meal prep tips.

  • All of these recipes can be: 
    • Made and eaten fresh right away, 
    • Fully cooked and stored in the fridge for up to 5 days safely or 
    • Most can be frozen up to 3+ months using prep instructions below.
  • Freezer Meal Tips:
    • Air is the enemy of good freezer meals. Wrap any containers without lids tightly with plastic wrap or foil and squeeze out extra air. Or use freezer bags.
    • Label what the meal is and the date you prepped it. You can grab some free freezer meal labels here to print.
    • When ready to use: thaw on a plate in the refrigerator for about 24 hours and then cook immediately using recipe instructions.
  • Money and Time-Saving Strategy: Double the batch, eat one now, and freeze the other using prep ahead instructions for later.
  • Pantry Staples – Always keep these on hand for the recipes below.
    • Cooking spray
    • Olive oil
    • Salt and pepper
    • Red pepper flakes
    • Italian seasoning
    • Garlic powder
    • Foil, plastic wrap, parchment paper
    • Gallon-sized freezer bags
  • Cross-contamination: Always be careful about cross-contamination when working with raw meat. Wash hands well after handling raw meat and clean any surfaces with disinfectant spray that made contact.

20-Minute Sausage Rigatoni (with Boursin Cheese)

Delicious and so easy! Leftovers are great too.

Yield: 1 batch makes 4 servings

Buy from Aldi:

  • 1 (4 ounce) Boursin Cheese with Garlic & Fine Herbs (in cheese section)
  • 1 pound ground pork sausage (turkey sausage works great too)
  • 1 pound (16 ounce) box of fusilli or rigatoni pasta
  • 1 jar marinara sauce

Kitchen Equipment Needed:

  • 1 large pot (for cooking pasta)
  • Wooden or large metal spoon
  • 1 large skillet/pan (for making sauce and adding pasta)
  • Flipper/turner spatula
  • Glass measuring cup (to save pasta water before draining)
  • Colander

To Prep Ahead: You can double the sauce when making a batch. Remove half the sauce, let it cool, and then freeze in a freezer bag or container for later. When ready to use, thaw in fridge and make fresh pasta to go with it. This remains good in the fridge for up to 5 days.

20-Minute Sausage Rigatoni (with Boursin Cheese)

Chicken Parmesan Casserole

Easiest and most popular casserole on our site. I serve it over whole grain pasta with a side salad.

Yield: 1 batch makes 5 servings

Buy from Aldi:ย 

  • 1 container of chopped rotisserie chicken (in deli section)
  • 1 jar marinara sauce
  • 1 ยฝ cups (about 8 ounce) bag shredded mozzarella
  • ยฝ cup grated or shredded Parmesan cheese
  • 1 cup Panko breadcrumbs (you will season this with olive oil and pantry seasonings and/or minced fresh herbs)

Equipment Needed:

  • 1 square baking dish OR 2 loaf pans
  • Spoon
  • Small bowl
  • Measuring cups and spoons

To Prep Ahead:ย 

  • Option 1: Could prep one batch and divide into two loaf pans (3 servings each), wrap in a few layers of foil, squeeze out air, and label. Thaw in fridge over night. Bake until bubbly and hot all the way through.
  • Option 2: Bake and store in fridge to eat leftovers all week.
Chicken Parmesan Casserole

Flatbread (or Naan) Pizzas

I always have these ingredients on hand for quick weeknight meals. Customize to your liking!

Yield: 1 batch makes 2 flatbreads or 4 servings

Buy from Aldi:

  • Your favorite pizza veggies: red onion, bell peppers, mushrooms, spinach
  • 1 package flatbreads (or 2 packages of naan bread)
  • 1 package prosciutto, pepperoni, or ham
  • 1 (6 ounce) ball/log of fresh mozzarella
  • 1 container crumbled feta cheese
  • 1 jar marinara

Kitchen Equipment Needed:

  • Sheet pan
  • Chefโ€™s knife
  • Cutting board
  • Medium mixing bowl
  • Spoon

To Prep Ahead: Prep both flatbread pizzas. Wrap one or both in a few layers of plastic wrap or foil, squeeze out extra air, label, and freeze. When ready to eat, thaw overnight in the fridge and bake according to directions.

Flatbread (or Naan) Pizzas

4-Ingredient Meatball Subs

Store these ingredients in your freezer and pantry to have these sandwiches ready to go anytime. Bonus points if you prep and freeze your own meatballs!

Yield: 1 batch makes 4 large subs

Buy from Aldi:

  • 1 bag of fully cooked meatballs (or make your own Italian Baked Meatballs)
  • 1 1/2 cups marinara sauce (1 jar is plenty)
  • 4 sub rolls or hotdog buns
  • 4+ slices Provolone cheese (sub: mozzarella cheese)

Equipment Needed:

  • Medium pot with lid
  • Spoon
  • Sheet pan
  • ยผ cup measuring cup

To Prep Ahead: Make a freezer meal kit containing: 1 bag frozen cooked meatballs, 1 package Provolone cheese, and 1 package of rolls. Keep a jar of marinara sauce in the pantry. Make a sandwich anytime youโ€™re ready by pulling out enough ingredients for one sandwich or more. The microwave is helpful for defrosting the rolls and then warming up the meatballs in sauce (be sure to cover the bowl). Follow recipe to finish cooking the sandwich.

Easy Meatball Subs

Easy Egg Fried Rice

Super tasty and nutritious. If you use pre-cooked rice, this is a one-pan meal. Add chicken or shrimp for extra protein.

Yield: 1 batch makes 6 servings

Buy from Aldi:ย 

For Sweet Soy Sauce:

  • Soy sauce
  • Brown sugar
  • Unsalted butter
  • Dried minced onion
  • Optional: Toasted sesame oil

For Fried Rice:

  • 1 head of broccoli
  • 2 large carrots
  • 2 cloves garlic (or jarred minced garlic)
  • 6 large eggs
  • 1 small bag of frozen peas
  • Brown rice (or at least 4 cups cooked rice)
  • Tip: Add cooked chicken or shrimp for more protein!

Equipment Needed:

  • Chefโ€™s knife
  • Cutting board
  • Small mixing bowl or liquid measuring cup
  • Fork or whisk
  • 1 large skillet/pan
  • Flipper/turner spatula
  • Measuring cups and spoons
  • 1 medium-size pot (for cooking rice, if needed)

To Prep Ahead: Cook fully and cool fully. Freeze/store leftovers in 2-cup glass containers with lids to make it easy to microwave.

Egg Fried Rice

Chicken & Broccoli Alfredo Casserole

A delicious and nutritious one dish meal.

Yield: 1 batch makes 6 servings

Buy from Aldi:

  • 1 head broccoli
  • 1 container of chopped rotisserie chicken (in deli section)
  • 1 box penne pasta (youโ€™ll only use 6 ouncesโ€ฆnot even half!!)
  • 1 cup shredded mozzarella cheese
  • ยผ cup grated Parmesan cheese
  • 1 (15 ounce) jar plain Alfredo sauce + โ…“ cup milk (or the recipe tells you how to make your own from scratch)

Equipment Needed:

  • Paring or Chefโ€™s Knife
  • Cutting board
  • 1 square baking dish OR 2 loaf pans
  • 1 large pot
  • Wooden spoon
  • Colander
  • Measuring cups and spoons

To Prep Ahead:ย 

  • Option 1: Could prep one batch and divide into two loaf pans (3 servings each), wrap in a few layers of foil, squeeze out air, and label. Thaw in fridge over night. Bake until bubbly and hot all the way through.
  • Option 2: Bake and store in fridge to eat leftovers for up to 5 days.
Chicken Broccoli Alfredo Bake

5-Ingredient Breakfast Casserole

I often serve this for dinner. Leftovers are great! Top with hot sauce, ketchup, or even diced tomatoes and avocados.

Yield: 1 batch makes 6 servings

Buy from Aldi:ย 

  • 1 pound ground breakfast or mild sausage (sub: bacon)
  • 3 cups frozen shredded hash browns
  • 1 ยฝ – 2 cups (8 ounce package) shredded cheddar cheese
  • 6 large eggs
  • 1/2 cup milk

Equipment Needed:

  • 1 square baking dish OR 2 loaf pans
  • 1 large skillet
  • Flipper/turner spatula or wooden spoon
  • Measuring cups and spoons
  • Mixing bowl
  • Whisk

To Prep Ahead:ย 

  • Option 1: Could prep one batch and divide into two loaf pans (3 servings each), wrap in a few layers of foil, squeeze out air, and label. Thaw in fridge over night. Bake until bubbly and hot all the way through.
  • Option 2: Bake and store in fridge to eat leftovers all week.

Less than 30 minutes. Serve over rice for a complete meal.

Yield: 1 batch makes 4 servings

Buy from Aldi:

  • 1 bag coleslaw mix
  • 1 bunch of green onions
  • 1 pound ground pork, chicken, or turkey (look for whatโ€™s on sale)
  • Jar of minced garlic (or buy fresh garlic to mince)
  • Ginger paste (or buy fresh ginger to mince)ย 
  • Low sodium soy sauce
  • Sriracha sauce
  • Brown sugar
  • Rice (I like basmati or brown rice; you can also buy pre-cooked rice)
  • Optional toppings: 1 lime, fresh cilantro, salted peanuts

Kitchen Equipment Needed:

  • Chefโ€™s knife (for slicing green onions)
  • Small cutting board
  • 1 large skillet/pan
  • Flipper/turner spatula
  • Measuring cups and spoons
  • 1 medium-size pot (for cooking rice)

To Prep Ahead: Cook fully and cool fully. Freeze/store leftovers in 2-cup glass containers with lids to make it easy to microwave. To each individual serving, add about ยฝ cup cooked rice and top with the egg roll mixture before sealing the lid.ย

4-Ingredient Boursin Pork Chops (or Chicken Cutlets)

Restaurant-quality meal at home. Only 4 main ingredients. Serve over mashed potatoes with steamed veggies.

Yield: 1 batch makes 4 servings

Buy from Aldi:ย 

  • 4 thin-cut boneless pork chops (or 1 pound boneless, skinless chicken breasts for Boursin Chicken instead)
  • 3/4 cup chicken broth, plus more as needed
  • 1 package Boursin Fine Herbs & Garlic cheese
  • 1 bunch fresh parsley (or sub dried parsley)

Equipment Needed:

  • Chefโ€™s knife
  • Cutting boardย 
  • 1 large skillet
  • Tongs or flipper/turner
  • Whisk
  • Plate

To Prep Ahead: This recipe doesnโ€™t freeze well, but leftovers are good for the next few days. To reheat, cut up the pork (or chicken), smother in the sauce and warm in the microwave in 20 second increments (make sure to cover with a paper towel).

Just follow package directions on taco packet to make this one easy! Great for a group or meal prep.

Yield: 1 batch makes 5 servings

Buy from Aldi:ย 

  • Favorite veggie toppings: Lettuce, tomatoes, onion, avocado, cilantro, lime wedges
  • Corn or flour tortillas (or hard shell tacos)
  • Shredded cheddar cheese
  • 1 taco seasoning packet
  • 1 pound ground beef (or ground turkey)
  • Any other favorite taco toppings:
    • Guacamole
    • Salsa
    • Refried beans or black beans
    • Sour cream

Equipment Needed:

  • Cutting board
  • Chefโ€™s knife
  • Large skillet
  • Flipper spatula or wooden spoon
  • Liquid measuring cup

To Prep Ahead: Double the taco meat and/or freeze any cooled, leftover meat in a freezer bag. If you want to make this a freezer meal kit, freeze the taco meat alongside a bag of shredded cheese and flour tortillas. When ready to eat: thaw, warm in microwave, and top with favorite taco toppings.

Frozen Breakfast Sandwiches

Good one to prep and freeze for grab-and-go breakfast or lunch.

Yield: 1 batch makes 8-9 sandwiches

Buy from Aldi:

  • 8-9 English muffins, ciabatta rolls, or mini croissants
  • ยฝ stick butter
  • 8 large eggs
  • 1/2 cup milk (your choice)
  • 8-9 slices Cheddar cheese
  • 1 pound bacon or Canadian bacon (how to bake bacon)

Kitchen Equipment Needed:

  • 9×13 inch baking dish (to bake eggs)
  • Rimmed sheet pan (to toast bread and bake the bacon)
  • Flatware knife
  • Flipper/turner spatula

To Prep Ahead: Prep a batch, wrap individually in foil, toss in freezer bag, and freeze. Remove foil and microwave in moist paper towel to warm up.

Budget-Friendly Side Dishes from Aldi

If you want to avoid processed junk while saving money, add one or more of these simple side dishes to your main dish.

  • Frozen peas or your favorite frozen vegetable
  • Bagged salad
  • Rice (brown rice is healthiest)
  • Pasta (whole wheat is healthiest)
  • Canned refried beans
  • Canned corn or green beans
  • Loaf of Italian or sourdough bread
  • Fresh veggies that are on sale – Clean and cut up to have on hand all week with your favorite dip (hummus, Ranch, etc.)
  • Fresh fruit thatโ€™s on sale – Other than berries, you can rinse off things like apples, pears, grapes, etc when you get home and place it in a bowl so youโ€™re more likely to eat it.
