This method is especially handy when you want fresh-tasting soup without the prep. Use a plastic freezer bag for easy storage. When you’re ready to enjoy it, thaw it using a safe method (like in the refrigerator overnight) and then cook according to the recipe directions.
- Option Two: Cook and Freeze Leftovers in PortionsMy personal favorite! Cook the soup as normal and then freeze leftovers in individual serving-sized portions. This is perfect for a quick lunch—just warm up a single portion in the microwave or on the stove without needing to defrost the entire batch. I highly recommend using Souper Cubes (pictured above) for perfectly portioned, easy-to-thaw servings.
- Pro Tip: Let Soup Cool Completely Before FreezingAlways let your soup cool completely before transferring it to freezer containers. This prevents freezer burn, which is the worst enemy of freezer meals. Additionally, avoid putting hot soup directly into plastic bags or containers, as the heat can cause chemicals to leach from the plastic into your food. Let the soup cool on the counter for up to two hours; if needed, refrigerate it after that before freezing.
4 Ways to Reheat Soup
- Use a crock pot. I like this approach because it can be done way ahead of time. After soup has thawed safely, just dump it in and set it to warm.
- Use a pot on the stove. Empty thawed contents into a pot. Cook on low and stir occasionally until contents are warmed up and ready to serve!
- Microwave your soup. I use a mixed method of first defrosting the soup until it can be chopped apart and then microwaving it on high for 30-60 second increments until the contents are hot. It’s worth mentioning that this method can get messy. Place a plate on top of the bowl to prevent splatters.
