What Is Aioli?

The name “aioli” literally means “garlic and oil” and originally comes from the Mediterranean coasts of Spain, France, and Italy. More recent versions of this French-ProvenΓ§al sauce resemble a garlic mayonnaise, incorporating egg yolks and lemon juice.

After tinkering with various ways to make homemade aioli, we decided making aioli from scratch is HARD to get right. (Truth be told, we had several flops before a success.) That’s why we decided to take a short-cut and use the following basic ingredients, including store-bought real mayo.

Ingredients

Avocado aioli ingredients measured out and labeled.
  • Avocado – Adds a creamy richness and lovely green color that brightens any dish. Toss any leftover avocados in our Avocado Pasta.
  • Real mayonnaise – I like Avocado Mayo, since it has cleaner ingredients.
  • Fresh lemon juice (or lime juice, to change it up) – adds a deep flavor.
  • Minced fresh parsley (or cilantro, to change it up)

Why Make Homemade Aioli?

One of the biggest challenges when trying to eat a real foods/whole foods diet is condiments! Most condiments are jam-packed with additives, preservatives, high-fructose corn syrup, and many other mystery ingredients. When time allows, you’ll find that making your own condiments like BBQ sauce, salad dressings, and pesto is not only healthier, but they are must tastier too! This proved to be especially true with our aioli.

We did take a short-cut by using real mayonnaise in this recipe, so look for the one with the fewest ingredients or buy one in the health food section.

How to Make Avocado Aioli

You’ll be surprised at how easy homemade avocado aioli actually is to make. Simply use a food processor to combine all of the ingredients listed below in the recipe.

Avocado chunks, real mayonnaise, lemon juice, minced garlic and parsley, salt and pepper in the bowl of a food processor.

What Should I Use Avocado Aioli On or With?

  • Steak Fries
  • Roasted Asparagus (or your favorite roasted vegetables)
  • Baked Parmesan Chicken Tenders – serve as a dip, along with your favorite BBQ sauce and Honey Mustard Sauce
  • Gourmet Chicken Sandwiches
  • Cheddar Chive Burgers
  • A dip for chips or raw veggie sticks
  • Topping on deli sandwiches

Recipe FAQs

How do I store homemade aioli?

Seal and store in the refrigerator for up to 3 days. The flavor is better after it sits for 24 hours.

Can I freeze aioli?

Because of the mayonnaise base, we don’t recommend freezing it.

Is aioli dairy-free?

Since this recipe is mayonnaise-based, it contains eggs and oil but NO dairy.

Note: Always check an aioli recipe and make sure it does not include sour cream, buttermilk, or cream to make sure it’s dairy-free.

Ingredients

  • 1/2 large ripe Hass avocado
  • 1/3 cup real mayonnaise (I like Avocado Mayo, since it has cleaner ingredients.)
  • 2 garlic cloves, smashed or minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon minced fresh parsley
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

    This is so yummy πŸ˜‹ my husband treated me to chick fi la delivery where I got their market salad and fruit cup.. I could not order the avocado ranch dressing so I decided to make this instead .. OH WOW!! I did not have any parsley nor lemon but substitute lime and it’s so much better then their dressing .. Hugs

    This is astonishingly good! I have made it a few times for BLT sandwiches and also to top hamburgers. I shared it with family last summer and they all agreed that it was a must have addition to summer picnics!
