10-Minute Spinach Cheddar Frittata

This 10-minute Spinach Cheddar Frittata is one of those short-cut weeknight meals to whip up when you’re dog tired and the grocery budget is low. It’s satiating, healthy, and super easy to make and tweak to your liking.
Why I Like This Spinach Frittata Recipe
- Super easy and cheap! It’s hard to mess up this simple egg dish.
- Only takes 10 minutes from start to finish.
- You can make it ahead and eat on it all week.
- It’s customizable. Add in cooked bacon, sausage, fresh herbs, a different kind of cheese. It’s your choice.
- Use leftovers on Breakfast Sandwiches or in Breakfast Burritos.
Ingredients
The ingredients for this vegetarian frittata are simple, healthy, and cheap.
- Large eggs
- Milk – Any kind will work, but I tested this with 2% milk.
- Baby spinach – I chop mine pretty finely. See some vegetable variation ideas below.
- Shredded cheddar cheese – I’ve also tested this with shredded Colby Jack, crumbled feta, and goat cheese, and they are all delicious subs.
- Salt and pepper – You can also add in a little red pepper flakes for some heat.
How to Make 10-Minute Spinach Frittata
My version is very simple and fast! Find the full printable recipe below.
- Place an oven rack in the top 1/3rd of the oven. Preheat the broiler to high.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in the chopped spinach and cheese.
- Heat an oven-safe, 12-inch skillet over medium heat and spray with cooking spray. Once pan is hot, pour egg mixture in and stir gently with a spatula to spread out spinach and cheese. Leave it alone to cook for about 3 minutes, until the bottom is set.
- Transfer pan to the top oven rack. Broil for 1-3 minutes or just until set on top. Keep a close eye on it and remove before it overcooks.
- Let cool for a few minutes. Slice and serve.
Tips for Success
- I have best results in a 12-inch cast iron skillet.
- Cook time may vary depending on the type of pan you use, so mainly go by how the frittata looks not the exact cook times in the recipe.
- You are looking for the bottom of the egg mixture to be set before moving the pan to the oven.
- Crack the oven and watch closely as it broils at the end. Remove right before or just as it sets on top. The key is not overcooking it!
- You can saute the spinach first before adding the eggs, if you’d it to be softer. I just like the short cut of finely chopping it and adding it in at the same time.
Variations on Spinach Frittata
This Spinach Frittata is very forgiving, so feel free to customize it to your preferences. Here are some variation ideas of what you could do:
- Fry several slices of bacon in the pan, chop it up, and add it to the egg mixture.
- Cook crumbled Italian sausage in the pan and then pour in the egg mixture.
- Saute diced onions, peppers, mushrooms, kale, and/or garlic in oil and then pour in the egg mixture.
- Add fresh chopped herbs, like parsley, basil, chives, or dill to the egg mixture.
- Use a different kind of cheese, such as crumbled feta, goat cheese, or another shredded cheese you like.
What to Serve with Spinach Frittata
FAQs
A frittata is started over the stove for a few minutes and then this one is finished under the broiler in the oven for a few minutes. Unlike an omelet, it requires no stirring or flipping, which can be a mess when making an omelet.
I have not tested this specific recipe with frozen spinach. However, based on other recipes I make with frozen spinach, this could work. You will have to thaw it and squeeze out as much liquid as possible before using.
Store leftovers in an air-tight container in the refrigerator for up to 5 days.
