We’re going on vacation in a few weeks. Although we’ll eat out some, I plan to take much of our own food to save money on meals. So, I’m working ahead on meals that my family loves and that I can just pull out of the fridge or freezer throughout the week. Here’s what I’m working on to take on our vacation…
Savory Breakfast Muffins – This is one of my husband’s favorite grab-and-go breakfasts. I will make these ahead and freeze them in freezer bags. Then, to reheat, just wrap in a moist paper towel and microwave for about 1 minute (or until thawed completely and warm).
Whole Wheat Pumpkin Pancakes – My family plows through these when I make them, but I hate standing over the stove for an hour…especially on vacation. So, I’ll work on these ahead of time while cooking up some of these other meals at the same time. To freeze, let cool and put in freezer bags. To reheat, toast in the toaster and then microwave a short bit if needed.
Make-Ahead Breakfast Sandwiches – These is so easy to throw together! Freezer meal instructions included in the recipe.
Chicken Parmesan Casserole – With a side salad and some fruit, this will make for a super simple dinner. Just thaw in the fridge and throw in the oven. This is THE most popular recipe on our site and for good reason.
Mini Italian Burgers – We’ll grill out one night, so I’ll pre-make these tasty little patties and freeze them. Freezing instructions are in the recipe. Everyone will love these!
Tomato Bisque with Grilled Cheese Sandwiches – This is hands-down my favorite soup recipe I’ve ever made and tastes just like Panera’s version. I’ll make some grilled cheese sandwiches when we’re there to go along with this.
Powerball Cookies – These are one of the most popular recipes on our blog. If you make them, you’ll understand why. I freeze these in a freezer bag and pull them out individually as needed. Just a 10-15 second nuke warms them up if needed.
Homemade Popcorn – I will make this the day before we leave and put it in a ziplock. It stays fresh for about two days and is THE BEST popcorn ever. Oh, and healthy too.
